Perfect with Chicken, Fish, or any BBQ side!<\/p>\n<p><strong>Ingredients;<\/strong><\/p>\n<p>2 cups diced tomato, seed removed<\/p>\n<p>1 cup diced fresh Mozzarella, about 4 oz.<\/p>\n<p>3 Tbsp minced shallots, or red onion<\/p>\n<p>3 tsp EV Olive Oil<\/p>\n<p>1 tsp lemon juice <strong>plus zest of 1 lemon\u00a0to put in at end of recipe<\/strong><\/p>\n<p>1\/2 tsp salt and 1\/4 tsp pepper<\/p>\n<p>1 clove garlic crushed and finely minced<\/p>\n<p>1 1\/4 cup chicken broth or water (broth adds more flavor)<\/p>\n<p>1 cup uncooked couscous<\/p>\n<p>1\/4 cup chopped basil or more to liking<\/p>\n<p><strong>Directions;<\/strong><\/p>\n<ol>\n<li>In a large bowl combine all ingredients from above up to the broth\/ water. <strong>Except Lemon Zest we will use that later<\/strong><\/li>\n<li>In a sauce pan bring chicken broth up to a boil. add the couscous and stir to combine. Quickly remove from heat, cover and let stand about 10 minutes.<\/li>\n<li>With a fork, fluff the couscous and let cool<\/li>\n<li>Add cooled couscous, zest of lemon and chopped basil to tomato mixture<\/li>\n<li>Adjust salt if needed.
