I do these in my toaster oven if not making a bunch.<\/p>\n<p>What do you always see in the produce section in the summer months? I&#8217;ll tell you&#8230; eggplant, tomatoes and basil! Add garlic and Parmesan cheese and <strong>what&#8217;s not to like??<\/strong><\/p>\n<p>Perfect for an easy side, (oh I think I mentioned easy!). I love this recipe, ( if you can call it that), and it reheats well too!<\/p>\n<p>I try and use baby eggplants or Japanese. Plan according to size of the eggplants your using for serving portions.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>2 Eggplants (amount depends on size), if I&#8217;m using super small baby&#8217;s I will use about 4-6<\/p>\n<p>2 large chopped tomatoes<\/p>\n<p>4 large chopped garlic cloves or to your liking<\/p>\n<p>1\/2 cup chopped basil, or more to your liking<\/p>\n<p>olive oil<\/p>\n<p>salt and pepper<\/p>\n<p>Red pepper flakes ( optional)<\/p>\n<p>1\/2 cup Parmesan cheese<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<p>Pretty much this is an eyeball thing. Make these according to your likes!<\/p>\n<p>1: Slice eggplants in 1\/2 length wise<\/p>\n<p>2: Sprinkle each slice on flesh side with salt, ( this will pull out the bitterness of the eggplants, If using little baby&#8217;s you can omit this process). Let sit for about 10 min. then rinse \u00a0 \u00a0 \u00a0 \u00a0\u00a0 to\u00a0 remove salt and pat dry.<\/p>\n<p>3: Drizzle olive oil over eggplants then sprinkle with tomatoes, garlic, basil, some salt and pepper, red pepper flakes if using.<\/p>\n<p>4: Top with Parmesan cheese.<\/p>\n<p>5: Wrap these beauties in foil and bake at 375 about 50 minutes or till tender when squeezed.<\/p>\n<p>6: Serve as they are or place under broiler to brown cheese.
