An added bonus is that it&#8217;s simple as well! This one is really GOOD!!<\/p>\n<p>&nbsp;<\/p>\n<p>Ingredients:<\/p>\n<p>2 bunches arugula,(about 6 cups)<\/p>\n<p>1 avocado, sliced<\/p>\n<p>Shaved Parmesan to your liking<\/p>\n<p>croutons (optional)<\/p>\n<p><em>Lemon Dressing:<\/em><\/p>\n<p>2 Tablespoons fresh lemon juice<\/p>\n<p>1 med. clove garlic finely minced or grated<\/p>\n<p>4-5 Tablespoons olive oil<\/p>\n<p>salt and pepper<\/p>\n<p>1) Make dressing by combining all components in a small jar\u00a0and shake or whisk in a bowl until creamy. Season with salt and pepper.<\/p>\n<p>2) Place arugula serving bowl then add most of the dressing, (the rest will be drizzled over the avocado slices). Toss well. Top salad with the avocado slices and drizzle remaining dressing over them, and season with a pinch of salt.Using a vegetable peeler shave slivers of Parmesan over the top.
