It is my go to to replace mashed potatoes,( which really have no nutritional values and are high in starch and carbs).<\/p>\n<p>It is a bit sweet and goes well with anything you would serve mashed potatoes with. I use an immersion blender with this but I guess a food processor or hand mixer would work just as well.<\/p>\n<p>&nbsp;<\/p>\n<p>Ingredients:.<\/p>\n<p>1 head cauliflower florets<\/p>\n<p>2 Tablespoons butter (or to your liking)<\/p>\n<p>1\/4 cup milk (I use almond but that&#8217;s because we don&#8217;t drink cows milk)<\/p>\n<p>1 tsp.salt and pepper<\/p>\n<p>Zest of 1 lemon (optional)<\/p>\n<p>1\/4 cup Parmesan cheese (optional)<\/p>\n<p>&nbsp;<\/p>\n<p>1) Boil cauliflower florets in about 2 -3 inches of salted water using a stock pot until tender. Using a stock pot helps to cook cauliflower evenly and you can reuse pot for mashing instead of dirtying another bowl.<\/p>\n<p>Do not cook until mushy or your finished product will be watery!<\/p>\n<p>2) Drain cauliflower well and toss back into pot.<\/p>\n<p>3) Add the rest of ingredients to the cauliflower.<\/p>\n<p>4) Blend until smooth and creamy. Add more milk if needed and taste to make sure there is enough salt and pepper.<\/p>\n<p>Serve warm with your choice of protein!<\/p>\n<p>This dish holds well if made ahead of time and reheated in the microwave!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I love this as a side dish!
